What size socket is required for the nut on the front sprocket of an 07 1250? Probably should have researched this before pulling the bike apart

And what's the castellated magnetic nut called that triggers the speed sensor? Someone who was a bit momentarily inept may have broken it and I need to replace it

Is it the nut or the end of the sensor that is magnetic?

Cast alloy nut so most likely the sensor. I've worked out what the part is called (speed sensor rotor) and will be checking with the local Suzuki dealer to see if they have the part today. Also, the nut is 32mm according to the manual that I found

I "think" the speedo rotor is 23-25nm.
I've just done the chain on my gen2, and I torqued it up to 25, with a dab of blue,  medium strength loctite.
Only on the rotor though,  not the sprocket nut,  which is 115nm on the oil cooled.  I assume it would be close to the same as the 1250's. Just incase you were unaware,  but you've got a manual,  so you should know already.
